100% Pure Maple Candy is made by Boiling Pure Maple Syrup to the soft ball stage of the candy thermometer, then allowed to cool to 195 degrees. It is then stirred until it is creamy, then poured into molds. Another batch of Pure Maple Syrup is also boiled to 11 degrees over the boiling point of water and cooled to room temperature. The dried candies are then soaked overnight in the heavy syrup to grow a crystal coating and lock in freshness for 8 months!
